City Engineer June 21, 2023 FATS, OILS, AND GREASE (FOG) MANAGEMENT PROGRAM ***INSPECTION PRE-NOTIFICATION*** As an owner of a food service establishment, this notice is to inform you that the City of Salem will be conducting grease trap/interceptor inspections as part of its Fats, Oils, and Grease (FOG) Management Program. An initial letter was mailed to you in December 2022 to notify you of this new program and regulations. A copy of the new regulations can be found online at www.salemma.gov. What can I Expect? City personnel and/or representatives from our consultant, Weston & Sampson, will be inspecting every food service establishment in the city on an annual basis as part of this program. The inspection takes 30 minutes to 1 hour, depending on the size of the establishment. The inspections will consist of gathering information on kitchen equipment, inventory of grease traps and interceptors, maintenance procedures, and overall grease management best practices. Please review the new regulations and requirements at www.salemma.gov to ensure you are prepared for the inspection. When will Inspections be Performed? Inspections will begin this year in July and will be performed on an annual rolling basis. They will be unscheduled, but every effort will be made to perform the inspection during non-peak hours. This notice is being distributed to provide you with pre-notification to be prepared for an inspection. What Happens if I Fail an Inspection? Food service establishments that fail an inspection will receive a written Notice of Violation and be re-inspected until all corrective measures have been put into place. The first violation is a written warning and subsequent violations will be civil fines/penalties as defined in the FOG Management Program regulations.
