J:\Environmental\Environm\WPDATA\temporary food\BakeSaleRequirements_Update1.doc CORTLAND COUNTY DEPARTMENT OF HEALTH DIVISION OF ENVIRONMENTAL HEALTH COUNTY OFFICE BUILDING, ROOM B9 60 CENTRAL AVENUE CORTLAND, NEW YORK 13045 TELEPHONE: [PHONE REDACTED] FAX: [PHONE REDACTED] To: Bake Sale Vendors From: Division of Environmental Health Re: Bake Sale Requirements Please complete a Temporary Food Service Establishment application and return it to this office 10 days prior to the event. As you read the Temporary Food Service Establishment Guidelines, you will note that many of the guidelines do not apply to Bake Sales in which the food is not being prepared at the booth. However, the following are some guidelines that apply strictly for Bake Sales. 1. Prior to transporting and displaying, all baked goods should be pre-wrapped using sanitary gloves to eliminate bare hand contact with the food 2. If all food is already prepackaged or wrapped before they are brought to the booth, a hand wash facility is not necessary on site as long there is someplace nearby a person can wash their hands. 3. Cream products should not be sold, i.e.; cream puffs, cream pies, pumpkin pies, creamed filled pastries, etc. Basic rule: If it needs refrigeration, it should not be sold. 4. Products made with items dipped in melted and cooled chocolate, or melted chocolate molded into forms should not be sold. 5. Quick breads made from scratch should not be sold. 6. Have each baker complete an index card to be posted by or affixed to their products listing: A. Common name of product B. Ingredients (list in descending amounts) C. Name and address of baker Thank you for your cooperation and have a successful sale. Application can be returned to the above address or in person to Room B-9 in the County Office Building.
