Mobile Retail Food Establishments Guidelines for Compliance with Chapter 24 Before operating a mobile retail food establishment, the Servicing Area and the mobile food establishment must be approved and inspected by the Cape May County Department of Health. Servicing Area Each mobile retail food establishment or transportation vehicle shall operate from a base location that is referred to as a Servicing Area. The Servicing Area is returned to daily and used for such things as vehicle and equipment cleaning, discharging liquid or solid wastes, refilling water tanks and ice bins and boarding food. The Servicing Area shall consist of: 1) A retail food establishment within Cape May County that is inspected by the Cape May County Department of Health: a. The Cape May County Department of Health must approve the retail food establishment for use as a Servicing Area b. Preparation of food IS allowed in a retail food establishment that is the approved Servicing Area for the Mobile Retail Food Establishment 2) A detached or attached garage or other building (if allowed by your Local Zoning Board) that contains the following: a. A 3 compartment sink with hot/cold running water to each compartment. Drains shall be indirectly connected to the sewage system through the use of air gaps or air breaks. b. A service sink (mop sink) for the disposal of mop water and other liquid waste and for the cleaning of mops and other cleaning tools c. Sufficient space for storage of all refrigerated/frozen foods, dry foods, paper products and utensils/wares within the approved area. Dry storage of food, paper products and utensils/wares shall be 6 inches off the floor. d. Indoor floor, wall and ceiling surfaces shall be constructed of a non-absorbent material e. Preparation of food is NOT allowed in a building that is not a retail food establishment, but that is the approved Servicing Area for the Mobile Retail Food Establishment KRISTINE GABOR Freeholder KEVIN L. A Mobile Retail Food Establishment shall be a self- contained unit on which all retail food operations take place. A Mobile Retail Food Establishment shall consist of: 1) The Mobile Establishment shall have a 3 compartment sink with hot/cold running water to each compartment and/or extra utensils/wares. Utensils /wares that are used with potentially hazardous foods need to be changed or washed/rinsed/sanitized at least every 4 hours when in constant use. 2) The Mobile Establishment shall have an integrated handwash sink with hot/cold running water. The handwash sink shall be stocked with soap and paper towels at all times. 3) The mobile Establishment shall have a water-tight holding facility that is 15% larger in capacity than the water supply tank. The water supply shall be of sufficient volume for the average daily use of the Mobile Establishment. 4) The Mobile Establishment shall be made of a smooth, durable and easily cleanable material. 5) Appropriate sneeze guards or other means shall be used to protect food from contamination 6) Adequate facilities shall be available for holding cold foods at 41F and below. 7) Adequate facilities shall be available for rapidly reheating foods for hot holding within 2 hours and subsequently hot holding those foods at 135F and higher. Use of sterno for hot holding is prohibited. Mobile Retail Food Establishment Selling only Pre-packaged Foods & Beverages 1) No hot/cold running water or sinks are required 2) All other applicable requirements above shall be met All Mobile Retail Food Establishments shall comply with all provisions of Subchapter 5.3 of Chapter 24, “Mobile water tank & mobile retail food establishment water tank.” Requirements may be augmented when needed to ensure food safety. 04/12
