Product Cooling Temperature Log The Administrative Rules of Montana for Food Service Establishments requires that all cooked foods not prepared for immediate service to be cooled as quickly as possible to keep bacteria from developing. To successfully cool foods, the following must be met: Stage 1: From 135°F to 70°F in 2 hours, and Stage 2: From 70°F to 41 °F in the next 4 hours The chart below is to be used to document that foods have been cooled according to the above specifications to ensure a safe product.
