City of Burlington Fats, Oils and Greases Policy The City of Burlington is committed to the goal of eliminating sewer overflows. Fats, Oils and Greases in the Wastewater Collection System are a major source of sewer overflows. This commitment will be fulfilled by the implementation of a two phase Fats, Oils and Grease ( F.O.G.) program. The first phase is designed to evaluate the major contributors and educate them in best management practices at their facilities, including proper grease trap maintenance. The second phase will consist of compliance and enforcement in accordance with the City of Burlington’s Sewer Use Ordinance. This phase will be implemented if Phase I fails to accomplish the ultimate goal.
