Based on my inquiry of the person responsible for gathering the information submitted is, to the best of my knowledge and belief,true, accurate, and complete. I am aware of penalties for submitting false information, including fines. ---PAGE BREAK--- Required Maintenance Schedule (different frequency with City authorization only) Indoor Grease Traps should be cleaned at least weekly. OUTDOOR GREASE INTERCEPTOR CLEANING INSTRUCTIONS You will need to hire a pumping company to do the cleaning: INDOOR GREASE TRAP CLEANING INSTRUCTIONS Outdoor Grease Interceptors should be cleaned at least once every 3 months. If the owner has to perform maintenance too often, then owner should consider modifying kitchen practices or installing a larger trap or a grease interceptor. When contracting with a grease pumper service, it is in your best interest to find out how the contractor will dispose of the waste. Obtain references from other businesses that use their services. Witness all grease interceptor cleaning and maintenance to ensure you are getting value for the cost of cleaning the grease interceptor. To properly clean the interceptor the entire contents must be removed, which includes the scraping of the walls, floor, baffles and pipework. The return of gray water back into the interceptor is strictly prohibited 1. Bail out any water in the trap to facilitate cleaning. Discharged water into the sanitary sewer 2. Remove baffles, then remove the grease out of the trap and deposit in a watertight container 3. Scrape the sides, lid and baffles to remove the grease, deposit grease in watertight container 4. If self-cleaning, contact a hauler or recycler to collect the removed grease 5. Replace the baffle/s and the lid 6. Record the maintenace performed PREVENT GREASE FROM ENTERING STORM DRAINS 1. Cover outdoor grease storage containers so that they do not collect rainwater. Rainwater can carry grease and eventually reach the stormwater system. 2. Locate grease storage containers away from storm drain catch basins. 3. Use absorbent pads or other material to clean up spills in the dumpster area and dispose of through solid waste procedures. 4. Do not clean equipment outdoors since water can flow to the gutter, storm drain or street.
