RFP 2020-04 ADDENDUM #1 January 28, 2020 The following information is provided as a result of question(s) posed by vendor(s): QUESTION 1: Number of prospective customers each day. ANSWER 1: The number of customers per day varies. There are approximately one hundred (100) City Hall employees. Folks attending City Court may also patronize the café. QUESTION 2: Sales for the past three years with customer counts. ANSWER 2: The City does not have this information. QUESTION 3: Check average for past three years. ANSWER 3: The City does not have this information. QUESTION 4: Menu with current pricing (if no visit). ANSWER 4: The City does not run the café. The menu and the pricing are set at the discretion of the café operator. Both should be included in the proposal. QUESTION 5: Equipment List including condition and age. ANSWER 5: Below is a list of the equipment found in the café area as of March, 2019. The condition and age can be assessed during a walk-through visit of the space. · Three bay stainless steel sinks; · Six burners – gas stove; · 24” x 48” flattop griddle; · Exhaust hoot and Ansel System; · Delfield Freezer/Refrigerator; · Meat slicer; · Four pots; · Three stainless steel mixing bowls; · Cash register; · Hand sink; · Bus cart; · Ecolab dishwasher; · Two-door freezer, T -49F; and · Two dry storage cabinets. ---PAGE BREAK--- QUESTION 6: Who is responsible for maintenance of equipment, hood system etc. ANSWER 6: The café operator will assume full responsibility for the condition, operation, repairs, alterations, improvements, maintenance, and management of the premises, except that the operator will not assume full responsibility for repairs that are structural in nature. The operator will be responsible for the regular cleaning and reasonable maintenance of the café area and the tables and floors abutting the café area. QUESTION 7: The name of the current POS system if one exists, and if so, what brand/vendor. ANSWER 7: There is no current POS system. This is the responsibility of the café operator. QUESTION 8: The current loyalty program, if one exists. ANSWER 8: Participation in any loyalty program(s) will be the café operator’s responsibility. QUESTION 9: Any upgrades that are planned for the area. ANSWER 9: There are no planned upgrades at the moment. QUESTION 10: The amount of catering requested by offices in the facility. ANSWER 10: The City caters a few events at City Hall each year (variable), but the City does not typically look to the café operator to cater these events.
